My client would like to hide the contact communication options from his users by any means, but allow them to make calls and send emails as well. Preferably, he would like to hide parts of these options like this "email*****". If that's too difficult, he would like to at the very least disable copying of communication options.
So, could you please provide an example of how I can disable the copying capabilities within user's browsers on one particular detail?

There is no way to simply hide the number or email and still be able to use it for calling and emailing. There are several ways to hide the communication options, but the number can be still visible during call.
You can create a business-rule hiding the field under certain conditions according to your need. Here you can find more information about business-rules:

Or you can restrict the access rights for reading for certain users. In this case the user will not be able to call since the call button near the number will be visible only if the field is filled in and user can see it. Feel free to check the documentation about access rights here:

You can also try additional developing in order to hide the value (for example field with type password displays ***).
But the idea to hide number and still be able to call is practically unreachable without major developing.
